Description

Quick & Healthy Mediterranean Turkey Meatball Bowl is a wholesome, high-protein dinner recipe featuring lean turkey meatballs, fresh vegetables, couscous, and creamy tzatziki. Ideal for meal prep, Mediterranean diet, and healthy eating.


Ingredients

1 lb ground turkey
1/4 cup chopped parsley
2 cloves garlic minced
1/3 cup breadcrumbs
1 egg
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1 cup couscous
1 cup diced cucumber
1 cup halved cherry tomatoes
1/2 cup tzatziki sauce
2 tbsp chopped dill
1 lemon cut into wedges


Instructions

  1. In a bowl, combine ground turkey, parsley, garlic, breadcrumbs, egg, salt, and pepper. Mix gently and form into meatballs.

  2. Heat olive oil in a skillet over medium heat. Cook meatballs in batches, turning to brown all sides, for about 10 minutes.

  3. Prepare couscous according to package directions, fluff with fork, season lightly.

  4. Assemble bowls with couscous, meatballs, cucumbers, tomatoes, tzatziki, dill, and lemon wedges.

Notes

Do not overmix meatball mixture to keep them tender.
Cook meatballs on medium heat for even doneness.
Season each element of the bowl for best flavor.
