Quick Honey Garlic Chicken Stir Fry

Description

A fast and flavorful stir fry with tender chicken, vibrant veggies, and a sweet-savory honey garlic sauce. Perfect for busy weeknights and easily customizable.


Ingredients

1 lb boneless, skinless chicken breast or thighs, cubed

2 tablespoons vegetable oil

2 cups broccoli florets

1 red bell pepper, sliced

1 cup snow peas or snap peas

3 cloves garlic, minced

1/3 cup honey

1/4 cup soy sauce

1 tablespoon rice vinegar

1 tablespoon cornstarch

2 tablespoons water

Cooked rice or noodles, for serving

Sesame seeds and chopped green onions, for garnish


Instructions

1. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add chicken and cook until golden and cooked through, about 5-6 minutes. Remove and set aside.

2. In the same skillet, add remaining oil and stir-fry broccoli, bell pepper, and snow peas for 4-5 minutes until tender-crisp.

3. In a bowl, combine honey, soy sauce, rice vinegar, and garlic. Pour into the pan with vegetables. Add the cooked chicken back.

4. Mix cornstarch with water in a small bowl to make a slurry. Add to the pan and cook for 1-2 minutes until thickened.

5. Serve over rice or noodles, garnished with sesame seeds and chopped green onions.

Notes

You can substitute chicken with shrimp or tofu.

For extra heat, add red pepper flakes or sriracha.

Works great for meal prep—stays good for 3 days in the fridge.
