These Quick No-Bake Pecan Dessert Balls are chewy, nutty, and naturally sweetened with dates and maple syrup. Made with just a few wholesome ingredients, they’re perfect for satisfying dessert cravings in a healthier way—no oven required.
Ingredients
1 1/2 cups pecan halves or pieces
1 cup pitted Medjool dates
1/2 cup rolled oats
2 tablespoons maple syrup
1/2 teaspoon cinnamon
Pinch of sea salt
1/2 teaspoon vanilla extract
Optional: finely shredded coconut or cocoa powder for rolling
Instructions
1. Lightly toast the pecans in a dry skillet over medium heat for 3–4 minutes, stirring frequently until fragrant. Let cool.
2. In a food processor, combine toasted pecans, dates, oats, cinnamon, and salt. Pulse until crumbly and well combined.
3. Add maple syrup and vanilla extract. Process again until the mixture starts to clump. If too dry, add a teaspoon of water.
4. Scoop out tablespoon-sized portions and roll into balls between your hands.
5. Optionally, roll each ball in shredded coconut or cocoa powder.
6. Chill in the fridge for at least 15 minutes before serving.
Notes
Toasting pecans enhances the nutty flavor but is optional.
If using dry dates, soak them in warm water for 10 minutes and drain.
Store leftovers in an airtight container in the fridge for up to 10 days or freeze for up to 3 months.
