Ingredients
1 box red velvet cake mix (15.25 oz)
2 large eggs
1/3 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup powdered sugar (for rolling)
Instructions
1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
2. In a large bowl, combine cake mix, eggs, oil, and vanilla extract until a sticky dough forms.
3. Chill dough in the fridge for 10–15 minutes.
4. Scoop 1 tablespoon of dough, roll into a ball, and coat in powdered sugar.
5. Arrange dough balls on baking sheet, 2 inches apart.
6. Bake for 9–11 minutes until tops crack and edges are set.
7. Cool on baking sheet for 5 minutes, then transfer to wire rack.
