Description

These Raspberry Cream Cheese Pastry Bites are an easy, impressive dessert with flaky puff pastry, creamy filling, and tart raspberries. Perfect for brunch, holidays, or a sweet treat.


Ingredients

1 sheet puff pastry, thawed 4 oz cream cheese, softened 2 tablespoons granulated sugar 1 teaspoon vanilla extract 24 raspberries, fresh or frozen Powdered sugar, for dusting


Instructions

1. Preheat oven to 400°F (200°C). Roll out puff pastry on a floured surface and cut into 2-inch squares. Place on parchment-lined baking sheet. Beat cream cheese, sugar, and vanilla until smooth and creamy. Spoon 1 teaspoon of cream cheese filling into the center of each square. Place one raspberry on top. Bake for 12–15 minutes until puffed and golden. Cool slightly, dust with powdered sugar, and serve.

Notes

Keep puff pastry chilled but pliable to handle easily. Do not overfill to avoid messy spills. Best served the same day for maximum flakiness.
