Ingredients
1 small sugar pumpkin (or 2 cups cubed pumpkin)
2 tablespoons olive oil
½ teaspoon sea salt
¼ teaspoon black pepper
½ teaspoon smoked paprika (optional)
2 balls burrata cheese
1 tablespoon balsamic glaze or pesto
Fresh thyme or basil leaves
Instructions
1. Preheat oven to 400°F (200°C). Peel and cube the pumpkin into 1-inch pieces.
2. Toss pumpkin with olive oil, sea salt, black pepper, and smoked paprika (if using).
3. Spread on a parchment-lined baking sheet and roast for 25-30 minutes, flipping halfway.
4. Arrange roasted pumpkin on a serving platter.
5. Gently place the burrata on top or beside the pumpkin.
6. Drizzle with balsamic glaze or pesto.
7. Garnish with fresh herbs.
8. Serve immediately with crusty bread if desired.
