Description
Sweet roasted strawberries and airy whipped ricotta on toasted bread—this Roasted Strawberry Whipped Ricotta Toast is elegant, easy, and bursting with flavor. Ideal for a brunch table or a morning treat, it’s where creamy meets fruity in the best way.
Ingredients
1 cup fresh strawberries, hulled and halved
1 tablespoon olive oil
1 tablespoon maple syrup or honey
1/2 teaspoon vanilla extract
Pinch sea salt
1 cup whole milk ricotta cheese
1 tablespoon heavy cream (optional)
4 slices thick bread (like sourdough or country loaf)
Honey or balsamic glaze, for drizzling
Fresh mint or basil, for garnish (optional)
Instructions
1. Preheat your oven to 375°F (190°C). On a lined baking sheet, toss the strawberries with olive oil, maple syrup (or honey), vanilla, and a pinch of salt. Roast for 20–25 minutes until soft and slightly caramelized.
2. While strawberries roast, blend ricotta and optional heavy cream until light and fluffy. Set aside or refrigerate.
3. Toast bread slices until golden and crisp using a toaster, oven, or grill pan.
4. Spread whipped ricotta generously on each toast. Top with roasted strawberries and their juices.
5. Drizzle with honey or balsamic glaze. Garnish with fresh mint or basil if desired. Serve immediately.
Notes
Add a pinch of black pepper or chili flakes for a savory twist.
Use mascarpone or whipped cream cheese if ricotta is unavailable.
Roast strawberries and whip ricotta ahead to save time the next day.
