Ingredients
1 pound breakfast sausage
0.25 cup all-purpose flour
2.5 cups whole milk
Salt and freshly ground black pepper to taste
1 pinch crushed red pepper flakes (optional)
6 to 8 freshly baked biscuits
Instructions
1. Heat a large skillet over medium heat. Add the sausage and break it up with a spatula as it cooks. Stir occasionally and cook until fully browned and no longer pink.
2. Sprinkle the flour over the cooked sausage and stir well, making sure the sausage is evenly coated. Let it cook for 1 to 2 minutes to eliminate the raw flour taste.
3. Gradually pour in the milk while stirring constantly to avoid lumps. Reduce the heat slightly and let the gravy simmer gently until it thickens, about 5 to 7 minutes.
4. Add salt, black pepper, and red pepper flakes to taste. Adjust seasoning as needed. The gravy should be thick and creamy.
5. Split the warm biscuits in half and spoon the sausage gravy over the top. Serve immediately while hot and comforting.

Let the flour cook for at least a minute to avoid a raw taste.
Stir constantly when adding milk to prevent lumps.
