Ingredients
1 lb ground breakfast sausage, cooked and crumbled
3 cups frozen shredded hashbrowns, thawed
1 1/2 cups shredded cheddar cheese
1/4 cup chopped green onions
3 large eggs
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper, to taste
Cooking spray or butter, for greasing muffin tin
Instructions
1. Preheat your oven to 375°F (190°C) and grease a 24-cup mini muffin tin with cooking spray or butter.
2. In a large bowl, mix the cooked sausage, thawed hashbrowns, cheddar cheese, green onions, eggs, garlic powder, onion powder, salt, and pepper.
3. Spoon the mixture evenly into the muffin cups and press each down slightly.
4. Bake for 25-30 minutes, until golden brown and crispy around the edges.
5. Let cool for 5 minutes, then remove gently and serve warm or at room temperature.
Notes
Be sure to thaw and drain any excess moisture from the hashbrowns to avoid sogginess.
You can substitute cheddar with Monterey Jack or pepper jack for a twist.
