Ingredients
1 lb Italian sausage
1 tablespoon olive oil
1 small onion, diced
3 garlic cloves, minced
4 cups chicken broth
8 oz cream cheese, cubed
1 cup grated Parmesan cheese
10 oz diced tomatoes with green chilies
1/2 teaspoon Italian seasoning
1/4 teaspoon black pepper
2 cups fresh spinach (optional)
Crushed red pepper flakes (optional, for garnish)
Instructions
1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it apart as it cooks. Drain excess grease.
2. Add diced onion and cook for 3-4 minutes until softened. Stir in minced garlic and cook for 30 seconds.
3. Pour in chicken broth, diced tomatoes with green chilies, Italian seasoning, and black pepper. Bring to a gentle simmer.
4. Stir in cubed cream cheese and Parmesan cheese. Continue stirring until fully melted and smooth.
5. Add spinach if using, and cook for 1-2 minutes until wilted.
6. Serve hot, garnished with red pepper flakes and paired with crusty bread.
Notes
For best flavor, use freshly grated Parmesan rather than pre-shredded.
You can swap spinach with kale or omit entirely.
Add more broth if the soup thickens upon reheating.
