1 lb beef sirloin, thinly sliced
6 tbsp unsalted butter
6 cloves garlic, minced
1 tbsp olive oil
2 tbsp fresh parsley, finely chopped

1/2 cup Parmesan cheese, finely grated
1/2 cup reserved pasta water
1/4 tsp red pepper flakes, optional
1 tsp lemon juice, optional
Instructions
1. Bring a large pot of salted water to a boil. Cook linguine until al dente; reserve 1/2 cup pasta water and drain.
2. Heat olive oil in a wide skillet over medium high. Pat beef dry, season with salt and pepper, then sear 1 to 2 minutes per side until browned. Transfer to a warm plate.
3. Reduce heat to medium. Add butter to the same skillet. When melted and foamy, add garlic; cook 30 to 60 seconds until fragrant, not browned.
4. Stir in 1/4 cup reserved pasta water to emulsify the sauce. Toss in drained linguine until glossy and coated, adding more pasta water as needed.
5. Return beef with any juices to the pan. Add Parmesan and toss gently until velvety. Adjust seasoning; add red pepper flakes and lemon juice if using.
6. Finish with parsley. Serve immediately with extra Parmesan.
