Description
This savoury mince is a comforting, one-pan classic packed with ground beef, vegetables, and a rich gravy. It’s quick to make, versatile to serve, and ideal for weeknight dinners or meal prep.
Ingredients
1 tablespoon olive oil
1 medium onion, finely chopped
2 garlic cloves, minced
500g ground beef (80/20 preferred)
1 carrot, peeled and diced
1 celery stalk, diced
0.5 cup frozen peas
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 beef stock cube dissolved in 1 cup hot water
1 tablespoon cornstarch mixed with 2 tablespoons cold water
Salt and pepper to taste
Instructions
1. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook for 3-4 minutes until softened. Stir in the garlic and cook for 30 seconds.
2. Add ground beef, breaking it up with a spoon. Cook until browned and no longer pink.
3. Stir in carrot, celery, tomato paste, Worcestershire sauce, and dried thyme. Cook for 2-3 minutes.
4. Pour in the beef stock mixture. Stir well and bring to a simmer. Cook for 10-12 minutes until vegetables are tender.
5. Add the cornstarch slurry. Stir until thickened. Add peas and cook for 2-3 more minutes.
6. Season with salt and pepper. Serve hot over mashed potatoes, toast, or rice.
Notes
Use leaner beef and add a splash of oil to reduce fat content.
Double the recipe and freeze leftovers for easy future meals.
For extra depth, add a splash of red wine during the simmer stage.
