Ingredients
10 large sea scallops
1 tablespoon olive oil
2 tablespoons butter
2 cloves garlic, minced
1 tablespoon Cajun seasoning
1 cup heavy cream
1/3 cup chicken broth
1/4 cup grated Parmesan cheese
1 tablespoon fresh parsley, chopped
1 teaspoon lemon juice
Salt and pepper to taste
Instructions
1. Pat the scallops dry with paper towels and season both sides with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat.
3. Sear scallops for 2 minutes per side until golden crust forms, then set aside.
4. Reduce heat to medium and add butter and garlic to the same skillet. Sauté for 30 seconds.
5. Stir in Cajun seasoning, then pour in chicken broth and heavy cream. Simmer for 4–5 minutes.
6. Stir in Parmesan cheese until melted and smooth.
7. Return scallops to skillet and spoon sauce over them.
8. Add lemon juice and parsley, warming everything together for 1–2 minutes.
9. Serve hot with your choice of sides.
Notes
Use dry sea scallops for the best sear.
Do not overcrowd the pan; sear in batches if necessary.
Let the sauce simmer to develop full flavor and thickness.
