Ingredients
4 boneless skinless chicken breasts
2 medium zucchinis sliced
1 cup cherry tomatoes
1 red onion sliced
3 tablespoons olive oil
3 cloves garlic minced
1 teaspoon dried oregano
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 lemon sliced
2 tablespoons fresh parsley chopped
Instructions
1. Preheat oven to 400°F (200°C) and prepare all vegetables and ingredients.
2. In a large bowl, combine chicken with olive oil, garlic, oregano, paprika, salt, and pepper. Toss well to coat evenly.
3. Arrange chicken on a large sheet pan and surround with zucchini, cherry tomatoes, and sliced onion.

6. Roast for 25–30 minutes until chicken reaches 165°F (75°C) and vegetables are tender.
