Ingredients
1 1/2 lbs ground beef
1 tablespoon olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
2 carrots, diced
1 cup frozen peas
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 cup beef broth
2 teaspoons fresh thyme
Salt and pepper to taste
3 cups mashed potatoes
2 tablespoons butter
Instructions
1. Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain excess fat.
2. Add diced onions, carrots, and garlic to the beef. Cook for about 5 minutes until softened.
3. Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper. Add beef broth and let simmer for 10 minutes until slightly thickened. Stir in peas and cook for 2 more minutes.
4. Preheat oven to 400°F (200°C). Spread the beef mixture in a baking dish. Top with mashed potatoes and smooth with a spatula. Dot with butter.
5. Bake for 25 minutes or until top is golden. Broil for 2-3 minutes if desired for extra color.
Notes
Use lean ground beef to avoid excess grease.
Let the filling cool slightly before topping with mashed potatoes to prevent mixing.
Add shredded cheddar on top for an extra cheesy crust.
