Ingredients
6 cups shredded carrots
1 cup raisins
1/2 cup mayonnaise
1/4 cup sour cream
2 tablespoons honey
1 tablespoon lemon juice
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
1. Wash, peel, and shred the carrots using a box grater or food processor.
2. Place the shredded carrots and raisins in a large mixing bowl.
3. In a separate bowl, whisk together the mayonnaise, sour cream, honey, lemon juice, salt, and black pepper until smooth.
4. Pour the dressing over the carrot mixture and toss until everything is evenly coated.
5. Cover and refrigerate for 20 to 30 minutes before serving for the best flavor.
6. Stir once more before serving and enjoy chilled.
Notes
Use freshly shredded carrots for the best texture and natural sweetness.
If the raisins are dry, soak them in warm water for 5 minutes, then drain well before adding.
For a slightly lighter dressing, replace part of the sour cream or mayonnaise with plain Greek yogurt.
