Ingredients
8 oz fettuccine pasta
1 lb large shrimp, peeled and deveined
2 cups broccoli florets
2 tablespoons butter
1 tablespoon olive oil
2 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
Salt, to taste
Black pepper, to taste
Instructions
1. Bring a large pot of salted water to a boil. Cook fettuccine until al dente. Drain and reserve 1/2 cup pasta water.
2. In a large skillet, heat olive oil over medium heat. Season shrimp with salt and pepper. Cook shrimp 2 minutes per side until pink and opaque. Remove and set aside.
3. Steam broccoli florets until tender and bright green, about 3 to 4 minutes. Set aside.
4. In the same skillet, melt butter. Add garlic and sauté for 1 minute until fragrant.
5. Pour in heavy cream and reduce heat to low. Simmer for 3 to 4 minutes. Stir in Parmesan until melted and smooth.
6. Add pasta, shrimp, and broccoli to the sauce. Toss to coat evenly. Use reserved pasta water to loosen the sauce if needed.
7. Serve immediately with extra Parmesan and black pepper.
Notes
Shrimp cook fast—don’t overdo it or they’ll turn rubbery.
Use freshly grated Parmesan for a smooth sauce.
Add a splash of milk or cream when reheating to keep it creamy.
