Ingredients
1 lb cheese tortellini
1 lb large shrimp, peeled and deveined
2 tablespoons butter
4 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1 tablespoon chopped parsley
1 tablespoon olive oil
Instructions
1. Bring a large pot of salted water to a boil. Add tortellini and cook according to package directions. Drain and set aside.
2. Heat olive oil and 1 tablespoon butter in a large skillet over medium heat. Add shrimp, season with salt and pepper, and sauté 2-3 minutes per side until pink. Remove and set aside.
3. In the same skillet, melt the remaining butter. Add garlic and cook for 1 minute. Stir in heavy cream and bring to a simmer for 3-4 minutes.
4. Whisk in Parmesan until melted and smooth.
5. Add shrimp and tortellini to the skillet. Toss to coat and simmer for 2 minutes.
6. Remove from heat and sprinkle with parsley. Serve hot with extra Parmesan if desired.
Notes
Use refrigerated tortellini for best texture; frozen works too with extra cook time.
Don’t overcook shrimp—they turn rubbery fast.
Reheat leftovers gently with a splash of cream to keep the sauce smooth.
