Ingredients
1/4 cup fresh lemon juice
1/2 cup olive oil
1 teaspoon Dijon mustard
1 teaspoon honey
1 small garlic clove minced

1/4 teaspoon black pepper
1 teaspoon lemon zest
Instructions
1. In a small bowl or jar, add the fresh lemon juice, Dijon mustard, honey, minced garlic, salt, black pepper, and lemon zest.
2. Whisk the mixture well until the honey and mustard are fully blended.
3. Slowly drizzle in the olive oil while whisking continuously, or pour it into the jar and shake until smooth.
4. Taste and adjust the seasoning with more salt, lemon juice, or honey if needed.
5. Serve immediately or refrigerate in a sealed jar until ready to use. Shake again before serving.

Use fresh lemon juice for the brightest flavor and best overall result.
Let the vinaigrette sit at room temperature for a few minutes before serving if the olive oil has thickened in the fridge.
