These Simple Pecan Pie Bars combine the flavors of classic pecan pie with the convenience of a bar cookie. Featuring a buttery shortbread crust and a rich, gooey pecan filling, they are perfect for any celebration or cozy dessert moment.
Ingredients
1 cup unsalted butter, softened
2/3 cup powdered sugar
2 cups all-purpose flour
1/4 teaspoon salt
3 large eggs
1 cup light corn syrup
1/2 cup granulated sugar
1/2 cup packed brown sugar
2 tablespoons unsalted butter, melted
1 1/2 teaspoons vanilla extract
2 cups chopped pecans
Instructions
1. Preheat oven to 350°F (175°C). In a mixing bowl, cream together softened butter and powdered sugar until smooth.
2. Add flour and salt, mixing until crumbly. Press mixture evenly into a greased 9×13-inch baking dish.
3. Bake crust for 20 minutes or until lightly golden. Set aside to cool slightly.
4. In another bowl, whisk together eggs, corn syrup, granulated sugar, brown sugar, melted butter, and vanilla extract.
5. Stir in chopped pecans until fully coated.
6. Pour pecan filling evenly over the warm crust.
7. Return to oven and bake 30–35 minutes until center is set and top is golden.
8. Let bars cool completely before slicing into squares.
