Ingredients
2 pounds beef stew meat or chuck roast, cut into chunks
1 small onion, diced
2 cups beef broth
1 packet brown gravy mix
1 packet onion soup mix
2 tablespoons cornstarch
3 tablespoons cold water
Salt and black pepper, to taste
Fresh parsley, for garnish (optional)
Instructions
1. Season the beef chunks with salt and pepper and place them in the slow cooker.
2. Sprinkle the diced onion over the beef.
3. In a bowl, whisk together beef broth, brown gravy mix, and onion soup mix. Pour over the beef.
4. Cover and cook on low for 6-8 hours or on high for 4-5 hours until beef is fork-tender.
5. Mix cornstarch with cold water to form a slurry. Stir into the slow cooker and cook on high for 15-20 minutes to thicken.
6. Serve hot over mashed potatoes, rice, or noodles. Garnish with parsley if desired.
Notes
