This Slow Cooker Buffalo Chicken Chili is creamy, spicy, and loaded with comforting flavor. It’s the perfect set-it-and-forget-it meal that turns simple ingredients into a hearty bowl of warmth with just the right amount of kick.
Ingredients
1 ½ pounds boneless skinless chicken breasts
15 oz can white beans, drained and rinsed
15 oz can black beans, drained and rinsed
15 oz can corn, drained
10 oz can diced tomatoes with green chilies
½ cup buffalo sauce
8 oz cream cheese, cubed
1 packet ranch seasoning mix
½ teaspoon onion powder
½ teaspoon garlic powder
Salt and pepper to taste
Optional toppings: shredded cheddar, green onions, sour cream, blue cheese crumbles
Instructions
1. Place chicken breasts at the bottom of the slow cooker.
2. Add white beans, black beans, corn, and diced tomatoes with green chilies.
3. Pour in buffalo sauce and sprinkle ranch seasoning, onion powder, garlic powder, salt, and pepper.
4. Top with cubed cream cheese but do not stir.
5. Cover and cook on low for 6–7 hours or high for 3–4 hours.
6. Remove chicken, shred it with two forks, and return it to the slow cooker.
7. Stir everything together until fully combined and creamy.
8. Serve hot with toppings of your choice.
Notes
Use rotisserie chicken to save time—just add it in the last 30 minutes.
Adjust heat level by using milder or spicier buffalo sauce.
Freeze leftovers in individual containers for quick lunches.
