Description
Slow Cooker Chicken Marsala Delight is a comforting Italian-inspired dinner made with tender chicken, mushrooms, and a rich Marsala wine cream sauce. Everything cooks low and slow, creating deep flavor with very little effort. Perfect for weeknights or special occasions, this dish pairs beautifully with pasta, rice, or mashed potatoes.
Ingredients
1½ pounds boneless skinless chicken breasts
8 ounces mushrooms sliced
¾ cup Marsala wine
½ cup chicken broth
½ cup heavy cream
3 cloves garlic minced
1 small onion thinly sliced
2 tablespoons olive oil
1 teaspoon dried thyme
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons cornstarch
2 tablespoons water
2 tablespoons fresh parsley chopped
Instructions
1. Season chicken breasts evenly with salt and black pepper.
2. Heat olive oil in a skillet over medium heat and sear chicken for 2–3 minutes per side until lightly golden.
3. Add onions, mushrooms, and garlic to the bottom of the slow cooker.
4. Place seared chicken on top of the vegetables.
5. Pour Marsala wine and chicken broth over the chicken and sprinkle with dried thyme.
6. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is tender.
7. In a small bowl, whisk cornstarch and water until smooth.
8. Stir cornstarch mixture and heavy cream into the slow cooker.
9. Cover and cook an additional 20–30 minutes until the sauce thickens.
10. Garnish with fresh parsley and serve warm.
Notes
Use boneless chicken thighs for extra tenderness if preferred.
Do not add cream until the end to prevent curdling.
If freezing, freeze without cream and add it fresh when reheating.
