These S’mores Cookie Bars bring the cozy charm of campfire s’mores indoors, layering a soft graham cracker cookie base with melty chocolate and gooey marshmallows. Perfect for parties, gifting, or when you just want that nostalgic, toasted treat any time of year.
Ingredients
1 cup unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 1/2 cups graham cracker crumbs (about 10 crackers)
1 teaspoon baking soda
1/2 teaspoon salt
2 cups milk chocolate chips or chopped chocolate bars
2 cups mini marshmallows
Instructions
1. Preheat your oven to 350°F (175°C). Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
2. Beat in the eggs one at a time, then mix in the vanilla extract.
3. In a separate bowl, whisk together flour, graham cracker crumbs, baking soda, and salt.
4. Gradually add the dry mix to the wet ingredients until a soft dough forms.
5. Press half the dough into a greased 9×13-inch pan.
6. Sprinkle chocolate evenly, then add marshmallows over the base.
7. Drop spoonfuls of the remaining dough over the top and spread gently.
8. Bake for 25–30 minutes until golden and set.
9. Let cool at least 20 minutes before slicing into bars.
10. Serve warm or store as desired.
Notes
These bars taste best slightly warm.
For a deeper flavor, try using semi-sweet chocolate.
