Description
Soft, thick, and chewy peanut butter cookies topped with melty chocolate kisses. A perfect sweet bite for the holidays or any day you need a nostalgic, chocolate-peanut butter treat.
Ingredients
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
3/4 cup creamy peanut butter
1 large egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
24 milk chocolate kisses, unwrapped
Instructions
1. Beat the softened butter, granulated sugar, and brown sugar together in a large bowl until light and fluffy.
2. Mix in the peanut butter, egg, and vanilla extract until smooth and well combined.
3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture, stirring until a soft dough forms.
4. Scoop 1-tablespoon portions of dough and roll into balls. Roll each ball in granulated sugar, then place on a parchment-lined baking sheet.
5. Bake at 350°F (175°C) for 8–10 minutes, or until the cookies are just set and the tops are cracked but still soft.
6. Immediately after removing from the oven, gently press a chocolate kiss into the center of each cookie. Cool on the pan for 5 minutes, then transfer to a wire rack.
Notes
Use creamy, no-stir peanut butter for best results.
Don’t overbake—cookies should still be soft when removed from the oven.
To freeze, roll dough into balls and freeze before baking.
