Description

A cozy and moist Southern-style apple cake made with fresh apples, warm spices, and optional pecans. This easy one-bowl cake is perfect for fall gatherings or a sweet treat with coffee.


Ingredients

2 cups all-purpose flour

1 1/2 teaspoons baking soda

1/2 teaspoon salt

2 teaspoons cinnamon

1/2 teaspoon nutmeg

1 1/2 cups granulated sugar

1/2 cup brown sugar

3 large eggs

1 1/4 cups vegetable oil

2 teaspoons vanilla extract

4 cups peeled and chopped apples

1 cup chopped pecans


Instructions

1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.

2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.

3. In a separate bowl, beat eggs with granulated sugar, brown sugar, oil, and vanilla until smooth.

4. Combine wet and dry mixtures, stirring gently. Fold in apples and pecans.

5. Spread batter in the prepared pan. Bake for 45–55 minutes, or until a toothpick comes out clean.

6. Cool completely in the pan before serving.

Notes

This cake tastes even better the next day.

You can swap pecans for walnuts or leave them out.

Use a mix of tart and sweet apples for richer flavor.
