Ingredients
1 1/2 cups granulated sugar
1/2 cup unsalted butter, melted and cooled
3 large eggs
3 tablespoons all-purpose flour
1/4 teaspoon salt
1 cup buttermilk (full-fat preferred)
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
1/4 teaspoon ground nutmeg (optional)
1 9-inch unbaked pie crust
Instructions
1. Preheat your oven to 350°F (175°C). Place your unbaked pie crust in a 9-inch pie dish and set it aside.
2. In a large bowl, whisk together the sugar, melted butter, and eggs until smooth.
3. Add flour and salt, then whisk again until well combined.
4. Stir in the buttermilk, lemon juice, vanilla extract, and nutmeg (if using). Mix until the filling is smooth.
5. Pour the filling into the prepared pie crust.
6. Bake for 45 to 55 minutes, or until the center is set and the top is lightly golden.
7. Let the pie cool completely at room temperature.
8. Serve at room temperature or chilled, optionally topped with whipped cream or fresh fruit.
Notes
For best flavor, use full-fat cultured buttermilk.
Let the pie cool gradually to avoid cracks on top.
