Description

Spicy Cajun Chicken Rigatoni with Velveeta Garlic Cream Sauce is a bold, creamy pasta recipe bursting with Cajun heat, tender chicken, and cheesy garlic flavor. Perfect for weeknight dinners or comforting family meals.


Ingredients

16 oz rigatoni pasta

1 lb boneless skinless chicken thighs

2 tbsp Cajun seasoning

2 tbsp olive oil

4 garlic cloves, minced

8 oz Velveeta cheese, cubed

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

2 tbsp butter

1/2 tsp salt

1/2 tsp black pepper

2 tbsp chopped parsley


Instructions

1. Bring a large pot of salted water to a boil and cook rigatoni until al dente. Drain and set aside.

2. Slice chicken into bite-sized pieces and coat with Cajun seasoning.

3. In a skillet, heat olive oil over medium-high heat. Sear chicken until golden and cooked through. Remove and set aside.

4. In the same pan, add butter and garlic. Sauté until fragrant, about 1 minute.

5. Pour in chicken broth and heavy cream to deglaze the pan.

6. Add Velveeta cubes and stir until fully melted and smooth.

7. Stir in Parmesan cheese and mix until combined.

8. Return chicken to the sauce, then add cooked rigatoni and toss to coat.

9. Simmer for a few minutes until sauce thickens slightly.

10. Season with salt and pepper. Garnish with parsley and serve hot.

Notes

This recipe is best served fresh for optimal texture.

Add extra cream when reheating to keep sauce smooth.
