Ingredients
1 pound steak
2 tablespoons Cajun seasoning
8 ounces fettuccine pasta
1 cup heavy cream
1 cup grated Parmesan cheese
3 cloves garlic, minced
2 tablespoons olive oil
2 tablespoons butter
Salt, to taste
Pepper, to taste
2 tablespoons fresh parsley, chopped
Instructions
1. Pat the steak dry and coat it on all sides with Cajun seasoning. Let it rest for 15 minutes.
2. Bring a large pot of salted water to a boil. Cook fettuccine until al dente. Drain and reserve 1 cup of pasta water.
3. Heat olive oil in a skillet and sear the steak for 3–4 minutes per side. Add butter, spoon it over the steak, then remove and rest.
4. In the same skillet, add garlic to the remaining butter. Pour in cream and stir. Add Parmesan cheese gradually while whisking until smooth. Adjust thickness with pasta water if needed.
5. Toss cooked pasta into the sauce until well coated. Slice the rested steak against the grain and place on top. Garnish with parsley and extra Parmesan.
Notes
Always rest the steak before slicing for best juiciness.
Gradually add cheese to low heat cream to prevent clumping.
Salt the pasta water well to boost flavor from the beginning.
