Description

Golden, savory, and with just the right amount of kick, these Spicy Cheddar Jalapeño Cornbread Waffles are perfect for breakfast, brunch, or dinner sides. With a crispy edge and cheesy center, they’re versatile enough to pair with eggs, chili, or a drizzle of honey butter.


Ingredients

1 cup all-purpose flour

1 cup yellow cornmeal (fine grind)

1 tablespoon sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups buttermilk

2 large eggs

1/4 cup melted butter

1 cup shredded sharp cheddar cheese

2 jalapeños finely chopped (seeds removed for less heat)

Optional pinch of cayenne pepper


Instructions

1. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt.

2. In another bowl, whisk the buttermilk, eggs, and melted butter until smooth.

3. Combine the wet mixture with the dry ingredients and stir until just mixed. Fold in cheddar and jalapeños.

4. Preheat and grease your waffle iron according to its instructions.

5. Pour the batter into the waffle iron and cook until golden and crispy. Serve warm with your favorite toppings.

Notes

Let the batter rest for 5 minutes for fluffier waffles.

Use gloves when handling jalapeños to avoid irritation.
