Ingredients
1 lb chicken breasts
1 cup buttermilk
2 tbsp hot sauce
1 cup flour
1/4 cup cornstarch
1 tsp paprika
1 tsp garlic powder
1/2 tsp cayenne pepper
1 tsp salt
1/2 tsp black pepper
2 eggs
Oil for frying (canola or peanut oil)
4 brioche buns
8 pickle slices
1/2 cup mayonnaise
1 tbsp lemon juice
1 tsp honey
1/4 tsp garlic powder
1 dash hot sauce
Instructions
1. Place chicken breasts between plastic wrap and pound to even thickness. Marinate in buttermilk, hot sauce, and salt for at least 1 hour.
2. In a bowl, mix flour, cornstarch, paprika, garlic powder, cayenne, salt, and pepper. In another bowl, beat eggs.
3. Remove chicken from marinade. Coat in flour mixture, dip in egg, then coat again in flour mix. Press to adhere.
4. Heat oil to 350°F. Fry chicken for 4-5 minutes per side until golden and cooked through. Drain on a wire rack.
5. In a small bowl, mix mayo, lemon juice, honey, garlic powder, and a dash of hot sauce to make the sauce.
6. Toast buns. Spread sauce, add chicken and pickles. Assemble and serve hot.
