Ingredients
8 oz red lentil pasta
2 tablespoons olive oil
4 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes
1/2 cup grated Parmesan cheese
1/4 cup reserved pasta water
Salt and black pepper to taste
Chopped parsley and extra Parmesan for garnish (optional)
Instructions
1. Bring a pot of salted water to a boil and cook the lentil pasta according to package directions. Reserve 1/4 cup of the pasta water before draining.
2. In a large skillet, heat olive oil over medium heat. Add minced garlic and crushed red pepper flakes. Stir constantly for 1-2 minutes until fragrant.
3. Add the cooked pasta to the skillet and toss to coat in the garlic oil. Remove from heat, then stir in the Parmesan cheese and reserved pasta water. Mix until creamy and smooth.
4. Season with salt and pepper to taste.
5. Serve hot, garnished with chopped parsley and extra Parmesan if desired.
