Description
This Spinach & Feta Frittata is a fluffy, protein-rich bake loaded with sautéed spinach, creamy feta, and aromatic spices. Perfect for brunch, meal prep, or a light dinner, it’s satisfying and incredibly easy to make—no crust or flipping needed.
Ingredients
8 large eggs
0.5 cup whole milk or heavy cream
1 tablespoon olive oil
0.5 medium onion, diced
2 cloves garlic, minced
3 cups fresh spinach, chopped
0.5 cup crumbled feta cheese
Salt and black pepper, to taste
Optional: pinch of nutmeg or red pepper flakes
Instructions
1. Preheat your oven to 375°F (190°C). Grease a 9-inch oven-safe skillet or baking dish.
2. In a skillet over medium heat, cook onion in olive oil until soft (3–4 minutes). Add garlic and sauté for 1 minute. Add spinach and cook until wilted. Remove from heat.
3. In a large bowl, whisk eggs, milk, salt, pepper, and any optional spices. Stir in feta and the spinach mixture.
4. Pour into prepared skillet and bake for 20–25 minutes until center is set and top is golden. Let rest for 5 minutes before slicing.
Notes
Use baby spinach for a quicker prep, or sauté regular spinach to soften stems.
You can prepare this frittata the night before and reheat in the morning.
Don’t skip letting it rest—this helps the texture set perfectly.
