Ingredients
1 pound steak (sirloin or ribeye), cut into bite-sized cubes
12 ounces rotini pasta
3 garlic cloves, minced
2 tablespoons butter
1 cup heavy cream
1 cup grated parmesan cheese
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped parsley or basil (optional)
Instructions
1. Heat olive oil in a skillet over medium-high heat. Season steak cubes with salt and pepper, then sear them in a single layer. Cook undisturbed to form a crust, stir and cook through. Transfer to a plate.
2. Lower heat. Add butter and minced garlic to the skillet. Sauté for 30 seconds until fragrant.
3. Pour in heavy cream, stir to combine, and simmer for 3 minutes.
4. Stir in grated parmesan and simmer until the sauce thickens. Adjust seasoning with more salt and pepper.
5. Meanwhile, cook rotini pasta in salted water until al dente. Reserve 1 cup of pasta water and drain.
6. Return steak to the skillet with the sauce. Add rotini and toss to combine. Add pasta water if needed to loosen the sauce.
7. Garnish with parsley or basil and serve hot.
