Ingredients
2 ripe bananas, mashed
1 cup diced strawberries
1/2 cup granulated sugar
1/4 cup brown sugar
1/3 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
Instructions
1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
2. In a large bowl, whisk together mashed bananas, granulated sugar, brown sugar, oil, eggs, and vanilla extract.
3. In a separate bowl, mix flour, baking soda, cinnamon, and salt. Add the dry ingredients to the wet and stir just until combined.
4. Gently fold in the diced strawberries without overmixing.
5. Pour batter into prepared pan. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
6. Cool in the pan for 10 minutes, then transfer to a wire rack. Slice when fully cooled.
Notes
Use very ripe bananas for the best natural sweetness and moisture.
Fresh strawberries work best, but frozen can be used if thawed and patted dry.
Don’t overmix the batter once you add the flour and berries—it keeps the bread tender.
