Description

This Strawberry Vanilla Cake layers tender vanilla sponge with sweet macerated strawberries and fluffy whipped cream frosting. It’s light, fruity, and perfect for spring celebrations or elegant gatherings.


Ingredients

2 1/2 cups all-purpose flour

2 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup unsalted butter, softened

1 3/4 cups granulated sugar

4 large eggs

1 tablespoon vanilla bean paste (or pure vanilla extract)

1 cup buttermilk

1/2 cup sour cream

1 1/2 cups diced fresh strawberries

1 tablespoon lemon juice

2 tablespoons sugar (for strawberries)

2 cups heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract (for whipped cream)


Instructions

1. In a bowl, toss the diced strawberries with lemon juice and 2 tbsp sugar. Let them sit for at least 30 minutes to macerate.

2. Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans.

3. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

4. In a large bowl, cream butter and granulated sugar until fluffy. Add eggs one at a time, then mix in vanilla.

5. Alternate adding flour mixture with buttermilk and sour cream, mixing until just combined.

6. Divide batter between pans. Bake 25–30 minutes or until a toothpick comes out clean. Cool for 10 minutes in pans, then fully on a rack.

7. Whip heavy cream with powdered sugar and vanilla until soft peaks form. Keep chilled.

8. Assemble cake: spread whipped cream on one layer, top with strawberries, add second layer, then frost the outside. Garnish with more strawberries.

Notes

Use real vanilla bean paste for the most aromatic sponge.

Chill the whipped cream bowl and beaters for best volume.

Make the cake one day ahead to enhance the flavor.
