Description

Stuffed Pepper Casserole delivers all the classic flavors of traditional stuffed peppers in an easy, oven-baked format. Juicy ground beef, tender rice, sweet bell peppers, and savory tomato sauce come together under a blanket of melted cheese for a comforting dinner.


Ingredients

1 pound ground beef

1 cup uncooked long-grain white rice

1 medium onion diced

3 bell peppers diced

3 cloves garlic minced

15 ounces tomato sauce

14.5 ounces diced tomatoes

2 cups beef broth

1 tablespoon Italian seasoning

1 teaspoon paprika

1 teaspoon salt

0.5 teaspoon black pepper

1.5 cups shredded mozzarella cheese

0.5 cup shredded cheddar cheese

1 tablespoon olive oil


Instructions

1. Heat olive oil in a skillet and cook onion until softened. Add garlic.

2. Brown ground beef and drain excess fat.

3. Add bell peppers and seasonings and cook briefly.

4. Stir in tomato sauce, diced tomatoes, rice, and broth and simmer.

5. Transfer mixture to a casserole dish and cover with foil.

6. Bake at 375°F for 35–40 minutes until rice is tender.

7. Top with cheese and bake uncovered until melted.

Notes

Use sweet bell peppers for best flavor.

Brown rice requires extra liquid and time.

Let casserole rest before serving for best texture.
