Description
This sugar free banana bread is naturally sweetened with ripe bananas and applesauce, offering a moist, tender, and flavorful loaf with no added sugars. Perfect for breakfast or a wholesome snack!
Ingredients
3 large overripe bananas (mashed)
2 large eggs
1/3 cup melted coconut oil
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon (optional)
1/3 cup chopped walnuts or pecans (optional)
Instructions
1. Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line it with parchment paper.
2. In a large mixing bowl, mash the bananas until smooth. Add eggs, melted coconut oil, applesauce, and vanilla extract. Whisk until well combined.
3. Add flour, baking soda, salt, and cinnamon. Stir until the batter is just combined—do not overmix.
4. Fold in chopped nuts, if using.
5. Pour the batter into the prepared loaf pan and smooth the top.
6. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use bananas with lots of brown spots for best natural sweetness.
Don’t overmix the batter to keep it light and tender.
This bread freezes well—slice and freeze for easy snacking.
