Description
This fresh summer salad is a vibrant medley of juicy cherry tomatoes, ripe peaches, crisp cucumbers, sweet blueberries, and crumbled feta, all brought together with a zesty white balsamic vinaigrette. It’s refreshing, colorful, and tastes like July on a plate.
Ingredients
1 cup cherry tomatoes
1 peach sliced thinly
1/2 cup blueberries
1/2 cucumber sliced thin
1/4 cup red onion finely sliced
1/2 cup crumbled feta cheese
2 tablespoons olive oil
1 tablespoon white balsamic vinegar
Salt and black pepper to taste
Fresh basil leaves for garnish
Instructions
1. Rinse all fruits and vegetables under cool water. Halve the cherry tomatoes, slice the cucumber and peach thinly, and finely slice the red onion. Set aside.
2. In a large serving bowl, combine the tomatoes, peach slices, blueberries, cucumber, and red onion. Gently toss together to mix without bruising the fruit.
3. Crumble the feta cheese over the salad. Try to distribute it evenly so you get a touch of creamy saltiness in every bite.
4. In a small bowl, whisk together the olive oil, white balsamic vinegar, salt, and black pepper. Drizzle over the salad. Gently toss again. Top with fresh basil leaves just before serving.
