Description

A cozy, protein-rich breakfast cobbler made with mashed sweet potatoes and creamy cottage cheese, topped with a crunchy oat-almond crumble. Lightly sweetened with maple syrup and perfect for meal prep mornings.


Ingredients

2 cups mashed sweet potatoes

1 cup cottage cheese

2 large eggs

1/4 cup maple syrup

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup rolled oats

1/4 cup almond flour

2 tablespoons coconut oil (melted)

2 tablespoons chopped pecans (optional)


Instructions

1. In a mixing bowl, combine mashed sweet potatoes, cottage cheese, eggs, maple syrup, cinnamon, nutmeg, vanilla, and salt. Whisk until smooth and creamy.

2. In a separate bowl, mix rolled oats, almond flour, melted coconut oil, and chopped pecans until crumbly.

3. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish. Pour the sweet potato mixture into the dish and spread evenly. Top with the oat crumble.

4. Bake for 35–40 minutes, until the top is golden and edges are set.

5. Let cool slightly before serving warm with yogurt or syrup.

Notes

Roast sweet potatoes ahead of time for quicker prep.

Don’t skip the vanilla—it balances the earthiness of the sweet potato.

For extra crunch, broil the cobbler for 2–3 minutes at the end.
