Ingredients
1/2 cup unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 tablespoon red food coloring
1 teaspoon vanilla extract
1/4 teaspoon white vinegar
1/4 cup unsweetened cocoa powder
3/4 cup all-purpose flour
1/4 teaspoon salt
4 oz cream cheese (optional, for glaze)
1/2 cup powdered sugar (optional, for glaze)
1 teaspoon vanilla extract (optional, for glaze)
Instructions
1. Preheat the oven to 350°F (175°C). Grease a mini muffin tin or line it with mini paper liners.
2. In a medium bowl, whisk together melted butter and sugar until glossy. Add eggs one at a time, then stir in red food coloring, vanilla, and vinegar.
3. Sift in cocoa powder, flour, and salt. Fold gently until the batter is smooth and no streaks remain.
4. Spoon the batter into the prepared mini muffin tin, filling each cup about 3/4 full. Bake for 12–15 minutes or until the tops are set and a toothpick comes out with moist crumbs.
5. Let bites cool in the pan for 5 minutes before transferring to a wire rack. Once cool, drizzle with cream cheese glaze if desired.
Notes
Make sure to use natural unsweetened cocoa powder for best color and flavor.
Don’t overbake—moist crumbs on the toothpick means perfect texture.
Glaze only after the bites are completely cool to avoid melting.
