Ingredients
10 garlic cloves, thinly sliced
3 tablespoons olive oil
4 cups chicken or vegetable broth
2 eggs
2 slices stale bread or baguette, cubed
1 teaspoon smoked paprika
Salt and black pepper to taste
Fresh parsley for garnish (optional)
Crushed red pepper (optional)
Instructions
1. Heat olive oil in a pot over medium-low heat. Add sliced garlic and sauté until golden but not burnt, about 3–5 minutes.
2. Stir in the smoked paprika, then add cubed bread. Toss to coat and let the bread crisp slightly.
3. Pour in broth, scraping the bottom of the pot. Bring to a gentle simmer and cook for 10 minutes.
4. Whisk the eggs in a bowl. Slowly drizzle them into the soup while stirring to create ribbons.
5. Season with salt, pepper, and optional red pepper flakes. Garnish with parsley and serve hot.
Notes
Use fresh garlic cloves for the best flavor.
Toast fresh bread if stale bread isn’t available.
