Ingredients
1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 can (10.5 oz) cream of mushroom soup
1/2 cup sour cream
1/2 tsp black pepper
1/2 tsp salt
1/2 tsp paprika
2 cups shredded cheddar cheese
1 bag (28 oz) frozen tater tots
Optional: chopped parsley or green onions for garnish
Instructions
1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
2. In a large skillet, cook the ground beef with chopped onion and garlic over medium heat until browned and onions are soft. Drain excess fat.
3. Stir in cream of mushroom soup, sour cream, salt, pepper, and paprika. Let the mixture simmer for 2–3 minutes.
4. Spread the beef mixture in the baking dish. Sprinkle half the shredded cheese on top.
5. Arrange frozen tater tots evenly across the top. Sprinkle the remaining cheese.
6. Bake uncovered for 35–40 minutes until the tots are golden and cheese is bubbling.
7. Garnish with chopped parsley or green onions and serve hot.
Notes
You can prep this dish up to a day ahead—just refrigerate until ready to bake.
Add in frozen corn, peas, or green beans for extra veggies.
