Ingredients
1/2 cup soy sauce
1/4 cup mirin
1/4 cup dashi stock
2 tablespoons sesame oil
1 tablespoon rice vinegar
2 tablespoons miso paste
1 tablespoon brown sugar
1 teaspoon freshly grated ginger
2 garlic cloves minced

Instructions
1. In a saucepan, combine soy sauce, mirin, and dashi. Bring to a light simmer and stir until blended for a classic tsuyu base.
2. For creamy sesame miso, whisk miso paste, sesame oil, vinegar, sugar, and warm water until smooth. Add ginger and garlic.
3. Add chili oil or gochujang for spice. Peanut butter adds rich, creamy texture for fusion styles.
