Ingredients
1 cup granulated sugar
1/2 cup brown sugar, packed
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1 tablespoon instant espresso powder
2 ounces cream cheese, softened
1/4 cup mascarpone cheese
1 3/4 cups all-purpose flour
1/2 cup Dutch-processed cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup powdered sugar (for rolling)
Instructions
1. In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy.
2. Mix in the eggs one at a time, followed by vanilla extract and the instant espresso powder. Then add the cream cheese and mascarpone, beating until fully incorporated.
3. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add this to the wet mixture, mixing until just combined. Do not overmix.
4. Cover the bowl with plastic wrap and chill the dough for at least 2 hours or overnight.
5. Preheat oven to 350°F (175°C). Line baking sheets with parchment. Scoop tablespoon-sized dough balls and roll each in powdered sugar.
6. Place on baking sheet 2 inches apart. Bake 10–12 minutes until puffed and crackled. Cool on pan 5 minutes before transferring to a rack.
Notes
Use full-fat cream cheese and mascarpone for the best texture and flavor.
