Ingredients
1 sheet all-butter puff pastry, thawed
4 oz goat cheese, softened
2 to 3 ripe heirloom or Roma tomatoes, thinly sliced
1 tbsp Dijon mustard
1 tbsp olive oil, plus extra for drizzling
1 egg, beaten (for egg wash)
A handful fresh basil leaves
Sea salt and freshly ground black pepper
Optional: flaky sea salt for finishing
Instructions
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Roll out the thawed puff pastry onto the sheet and gently score a 1-inch border around the edges with a knife, careful not to cut all the way through.
2. Spread the Dijon mustard evenly within the scored border. Then, dollop and spread the softened goat cheese on top of the mustard layer.
3. Layer the tomato slices in a single, slightly overlapping layer over the cheese. Season with salt and pepper. Drizzle a bit of olive oil on top.
4. Carefully fold the edges of the pastry over the tomatoes to create a rustic crust. Brush the edges with the beaten egg.
5. Bake for 25–30 minutes or until the crust is golden brown and the tomatoes are tender. Let cool slightly, top with fresh basil, and optionally sprinkle flaky sea salt.
