This Turkey Noodle Soup is the ultimate cozy comfort dish—perfect for using up leftover turkey and packed with carrots, celery, herbs, and wide egg noodles in a flavorful broth. It’s quick, hearty, and loved by both kids and adults.
Ingredients
2 tablespoons olive oil
1 medium yellow onion, diced
3 garlic cloves, minced
3 large carrots, sliced
2 celery stalks, sliced
8 cups low-sodium chicken or turkey broth
2 cups cooked turkey, shredded or chopped
1 teaspoon dried thyme
0.5 teaspoon dried rosemary
Salt and pepper, to taste
3 cups wide egg noodles
0.25 cup fresh parsley, chopped (optional)
Instructions
1. In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery. Cook for 5-6 minutes, until vegetables begin to soften. Add garlic and cook for another minute until fragrant.
2. Pour in the broth, then stir in thyme and rosemary. Bring the mixture to a gentle boil.
3. Add the cooked turkey to the pot. Reduce the heat and simmer for about 15 minutes to let the flavors meld.
4. Stir in the egg noodles and cook for another 7-8 minutes, or until noodles are just tender.
5. Taste and adjust seasoning with salt and pepper. Stir in fresh parsley if using, and serve hot.
Notes
Use rotisserie chicken if turkey isn’t available.
Cook noodles separately if you plan to freeze.
