Ingredients
8 slices rye bread
1 lb corned beef, thinly sliced
1 ½ cups sauerkraut, drained
8 slices Swiss cheese
½ cup Russian or Thousand Island dressing
4 tbsp butter, softened
Instructions
1. Drain the sauerkraut thoroughly and pat dry to remove excess moisture.
2. Spread dressing on one side of each slice of bread.
3. Layer corned beef evenly over half the slices.
4. Add sauerkraut on top of the corned beef.
5. Place Swiss cheese over the sauerkraut.
6. Top with remaining bread slices, dressing side down.
7. Spread butter on the outside of each sandwich.
8. Heat a skillet over medium heat.
9. Grill sandwiches for 3–4 minutes per side until golden brown and cheese is melted.
10. Slice and serve immediately.
Notes
Drain the sauerkraut well to avoid soggy sandwiches.
Use medium heat to ensure the bread crisps without burning.
