Ingredients
1 lb chicken breast
2 cups broccoli florets
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
1 cup thinly sliced carrots
1 cup snow peas
1 small red onion
2 cloves garlic
1 tablespoon grated fresh ginger
1/3 cup soy sauce
2 tablespoons honey or brown sugar
1 tablespoon rice vinegar
1 tablespoon cornstarch
1 tablespoon water
3 cups cooked wild rice
Instructions
1. Slice the chicken into bite-sized pieces and chop all vegetables.
2. In a small bowl, whisk soy sauce, honey or brown sugar, garlic, ginger, rice vinegar, and cornstarch dissolved in water to make the teriyaki sauce.
3. Heat a skillet or wok with oil and sear chicken until golden and cooked through. Remove from pan.
4. Add more oil and stir-fry the onion, peppers, carrots, broccoli, and snow peas until tender-crisp.
5. Return chicken to the pan, pour in the teriyaki sauce, and cook until thickened and glossy.
6. Serve immediately over wild rice while hot.
Notes
Use fresh ginger and garlic for maximum flavor.
Don’t overcrowd the pan to avoid steaming the ingredients.
Adjust the sweetness of the sauce to taste with more or less honey.
