Ingredients
4 medium golden beets
100 g goat cheese crumbled
½ cup walnuts toasted
4 cups mixed greens
2 tablespoons fresh herbs parsley or mint
1 tablespoon honey
2 tablespoons balsamic vinegar
3 tablespoons olive oil
salt and pepper to taste
Instructions
1. Preheat oven to 400°F (200°C). Scrub and trim golden beets, wrap in foil, and roast for 45–60 minutes until tender.
2. Let roasted beets cool slightly, peel, and cut into wedges or slices.
3. Toast walnuts in a dry skillet over medium heat for 3–5 minutes until fragrant.
4. In a bowl, whisk balsamic vinegar, honey, salt, and pepper. Slowly drizzle in olive oil, whisking to emulsify.
5. Arrange mixed greens on a platter, top with roasted beets, crumbled goat cheese, and toasted walnuts.
6. Drizzle honey balsamic dressing over the salad and garnish with fresh herbs.
7. Serve immediately or chill before serving.

Let roasted beets cool before peeling to avoid burns.
Toast walnuts just until fragrant to prevent bitterness.
